An Enthusiasm For Baking - Flapjacks

You can never go wrong with flapjacks! They're so super easy to make and they're the perfect Autumn treat! My favourite will always be the classic golden syrup flapjack but you can add anything from chocolate to dried fruit and they'll taste absolutely delicious! Autumn and Winter are my favourite seasons to bake (mainly because the warmth from the oven keeps me cosy). I'm definitely going to be doing a lot of baking this Autumn, lots of warm homemade treats straight from the oven!

Usually I wouldn't need to follow instructions for flapjacks as they are pretty simple but this time I decided to take this recipe from Tanya Bakes, purely because it includes Smarties! I have changed it slightly, because when I first made them I didn't have the correct amount of golden syrup. It asks for 10 tablespoons of golden syrup but I only managed 4, which is still the right amount for chewy, sticky, golden syrup flapjacks! You also don't have to use Smarties, you can add any sort of chocolate you like, I did use dark chocolate chunks first time round and the chocolate melted right through, which was so tasty!

INGREDIENTS

Prep time: 10 minutes
Cooking time: 20 minutes

.................................

125g butter
10 tablespoons golden syrup (I used 4)
100g light soft brown sugar
250g porridge oats
1 tube Smarties (or any chocolate you like)

1:: Preheat the oven to 180C/350F/GM4. Line a 20cm square baking tin with greaseproof paper.

2:: Melt the butter in a medium pan over a low heat, then add the golden syrup and sugar. Heat gently until the sugar has dissolved and stir until everything is well combined.

3:: Remove from the heat and stir in the oats. Mix until well combined.

4:: Pour into the tin, spread and squash down with a metal spoon, then bake in the oven for 20 minutes.

5:: While still hot, press the Smarties into the top. Leave to cool in the tin. Once cool, cut into squares.
