Of course my favourite way to spend my cold Winter mornings is to bake! On my days off of work I have been enjoying doing lots of baking, and making some gingerbread men was number one on my festive baking list! Christmas isn't just the same without some gingerbread men and rather than buying from the shop I love making my own. I love everything about spiced biscuits, the smell of the spices mixed together in the bowl and watching the biscuits turn a warm golden colour in the oven.
I bought my gingerbread men cookie cutters from Sainsbury's which came as a pack of three, one big, medium and a super adorable small one. All I had in the cupboard was some classic white icing sugar so decided to pipe on a simple face and buttons for the gingerbread men. The best thing about these biscuits is that there are no rules for decoration, you can decorate however you like!
Gingerbread men baking isn't just for kids you know! So without further ado here is the recipe for gingerbread men biscuits:
125g unsalted butter,
175g light brown soft sugar
3 or 4 tablespoons golden syrup
350g plain flour, plus extra
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
2 teaspoons ground ginger
For the icing:
200g icing sugar
1 teaspoon vanilla extract
1. Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar.
2. Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes.
3. Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper.
4.Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.
5.Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.
